Would you like a "fresh" pastry today? Many of you have purchased a pastry and Starbucks and we're going to dig into the pastries today.
First off, let's start with the creation. They do alot of testing in the lab with the recipes... then they test them out on an audience at the SSC. Once they get a winner, it heads off to the centralized baking processing plant, where they start making it for the stores. After they make it, it ends up at a distribution center on giant tables for each product. Scones, muffins, loaf cakes, etc... waiting for the picker to load up a pallet for store #1234, which then gets loaded all into a truck and delivered to the store at 0-dark thirty. This process can take 24 to 48 hours... Feeeee-Resh! Once it arrives at the store, the partners work feverishly within a small window of time to display all of them to standard in hopes of opening 10-minutes early. The extras are stored somewhere until the day part changes and the case can be "refreshed"... at the end of the day, whatever is left, gets "marked out" and dumped into a bag for either the homeless or the garbage...
So there you have it... your "fresh" pastry from mountaintop to counter top. Join us tomorrow when we examine how to manipulate ALS to bump up your Ideal Hours and pad your schedule while still maintaining your labor percent and hitting your efficiency numbers.
Just kidding... I wouldn't teach you such things. We'll see you tomorrow for your usual.
